Strawberry Cream Roll

I made this last night and it was Yummy! but I wish I would have had some FRESH Strawberries to put in it.


Strawberry Cream Roll
So delicious and easy to make

3 eggs
1 c. granulated sugar
1/3 c. water
1 teaspoon vanilla
1 c. cake flour or 3/4 c. all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Confectioners sugar

Heat oven to 375. Line Jelly Roll pan 15.5 x10.5 x 1 inch , with aluminum foil or waxed paper; grease. In mixing bowl, beat eggs about 5 minutes or until very thick and lemon colored. Gradually beat in granulated sugar. On low speed, blend in water and vanilla. Gradually add flour, baking powder and salt, beating just until batter is smooth. pour into pan spreading batter to corners.
Bake 12 to 15 minutes or until wooden pick inserted in center comes out clean. Loosen cake from edges of pan. Invert on towel sprinkled with confectioners sugar. Carefully remove foil; trim off stiff edges if necessary.
While hot, roll cake and towel from narrow end. Cool on wire rack. Unroll cake; remove towel.


Strawberry Cream Filling

1/2 c of Whipping Cream
1/4-1/2 Strawberry Jam (give or take)
Beat Whipping Cream until stiff add Strawberry Jam fold into Cream Fill Jelly Roll and roll back up.
